The Most Amazing Chocolate Cake

The Most Amazing Chocolate Cake is here. I call this my Matilda Cake because I swear it's just as good as the cake that Bruce Bogtrotter ate in Matilda. Moist, chocolatey perfection. This is the chocolate cake you've been dreaming of.

Make it
45 minutes

Ingredients
The Most Amazing Chocolate Cake
  • butter and flour for coating and dusting the cake pan
  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1½ cups unsweetened cocoa powder
  • 1 tablespoon baking soda
  • 1½ teaspoons baking powder
  • 1½ teaspoons salt
  • 4 large eggs
  • 1½ cups buttermilk
  • 1½ cups warm water
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract

Chocolate Cream Cheese Buttercream Frosting
  • 1½ cups butter, softened
  • 8 oz cream cheese, softened
  • 1½ cups unsweetened cocoa powder
  • 3 teaspoons vanilla extract
  • 7-8 cups powdered sugar
  • about ¼ cup milk (as needed)


Instructions
The Most Amazing Chocolate Cake
  1. Preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour and tap out the excess.
  2. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
  3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
  4. Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly.
  5. Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.
  6. Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.
  7. Frost with your favorite frosting and enjoy!




Chocolate Cream Cheese Buttercream Frosting
  1. In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results
  2. Add in cocoa powder and vanilla extract. Beat until combined.
  3. Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated.

Bake at 176 degrees celsius in three 23 centimeter pans

Finger foods for Kids (Mini Meat Balls)

Some kids can be fussy eaters. Why not try some simple yet interesting fingers foods for them instead.

Full of much needed proteins and can also be packed with veggies such as broccoli, cauliflower and carrots, your kids would not even realize they are eating something healthy. Try this recipe. You can always adjust to your kids taste and habits, example adding a nice sauce and spaghetti. 
Preparations:
  • 1 pounds ground beef
  • 1 cup breadcrumbs (or Crix)
  • 1 medium onion
  • 1 eggs
  • 1/2 cup milk
  • 2 minced garlic cloves
  • ½ cup finely chopped chive and  Shadon Beni leaves
  • Salt and pepper to taste
  • 1/2 carrot, or 1/2 cup broccoli or 1/4 cauliflower finely chopped. 
How To Make:
  1. In a large bowl,Mix together all ingredients properly and refrigerate for 30 minutes.
  2. Preheat the oven to 350 degrees F.
  3. Roll the cold meatball into sizes kids can eat.
  4. Spray the cooking pan with cooking spray of brush with oil  and line the meat ball in it.
  5. Bake for 25-30 minutes.
  6. Can be served as a stand alone meal or with spaghetti and a dip.

Shape Learning Activities for Kids

 Here we introduce our kids to basic shapes such as a square, rectangle, circle and triangle among others. Some activities also include shapes of vegetables, fruits, and other everyday objects. These activities can help the child learn about shapes with example, remember and identify shapes.

​You can try this activity by using a color paper or cloth. It needs a little bit of preparation though.
You will need:
  • 2 drawing or craft sheets
  • Scissors
  • Pencil or sketch to draw shapes
  • Glue
What to do:
  1. Cut different shapes out of the chart paper. These could be shapes of vegetables, fruits, vehicles, geometric shapes for kids to learn and other objects he or she sees every day.
  2. Draw the same shapes or patterns on the other chart paper.
  3. Give the shapes to the child and ask him to place the right shape at the right place.
This activity is a great way to reinforce what the child has learned at school.

What kids learn: Identifying and memorizing shapes
This activity is ideal for small todlers or kids who have just been introduced to the concepts of geometry. To reduce the preparation time, you can also buy ready-to-use wooden cutouts of different shapes for the activity.
